Fruit Mince Sundae


Fruit Mince Caramel Sauce

You’ll Need

6 Fruit Mince Tarts
220g brown sugar
60g butter
150g cream
5g vanilla
4g salt

Method

Hollow out fruit mince tarts and set aside the filling. Combine all other ingredients in a small saucepan and bring to a simmer. Stir in your fruit mince filling and incorporate thoroughly.

Set aside and allow to cool to room temperature.

Tart Shell Crumble

You’ll Need

6 fruit mince tart shells
120g macadamias
50g sugar
20g water
12g salt

Method

Pre-heat oven to 140°C for 30 minutes.

Toss your macadamias in a bowl with water, sugar and salt. Crush your tart shells by hand or in a bag. Add them to the bowl. Give everything a quick toss to coat evenly and place on an oven safe tray.

Bake for 20-30 minutes or until the macadamias and sugar are deeply caramelized. Remove from the oven and allow to cool at room temperature. Break the mass apart and blitz in a food processor until the crumbled texture is achieved.

Assembly

In your vessel of choice, layer your favourite ice cream with caramel sauce and crumble. Top with sauce, crumble and fresh fruit!
