SMOKED CHEDDAR & RIESLING DIPPING SAUCE
60g, salted butter
30g, plain flour (sifted)
190ml, riesling – sweet
1 tsp, cayenne pepper
260g, smoked cheddar
Melt butter over medium heat, sprinkle in flour while stirring constantly until a smooth paste forms and starts to turn white around the edges.
Slowly add milk and riesling whisking constantly over a low heat until smooth and silky (around 4 mins).
Add cheddar cheese and cayenne papper and stir until melted.
Check seasoning and adjust salt and pepper to your liking.
