THE DISH: Trader & Co


When Toni & Daniel Neuhaus got married and left Yass in 2008, the plan, like many peoples plans when leaving their hometown, was to never go back. 

Living and working overseas they were embedded in youth and community work a world away from the small town of Yass. It was through this type of work that an important seed was planted for their future, one that they would see through by starting their own social enterprise, but first, they knew that to be able to give money to communities in need, they would first need to make money.

After 7 years on the road, the benefits of small town living enticed them back home again and they returned to Yass to start a family.

Taking a gamble on an abandoned hardware store, they opened the first iteration of Trader & Co, a co-op with three businesses trading out of the converted space. With little money to spend on the conversion they kept the rustic hardware store vibes with the original concrete flooring, plywood walls and open ceiling with old timbers. It was here they were able to make a home for their coffee roasters, Six8. Through this business they were able to start their social enterprise and channel profits from the sales of their ethically sourced beans back to charitable causes around the world.

Eventually Toni & Daniel became the sole owners of the space and took the opportunity during lockdown to undertake renovations to create the warm and inviting cafe, coffee roasters and wholefoods trader it’s become today.

The food at Trader & Co is whole-heartedly nutritious, wholesome, tasty and local. They pride themselves on using local suppliers and Australian ingredients, a philosophy that has really resonated with the Yass community.

The Dish we’re spotlighting today is brand new to the menu at Trader & Co and is already proving to be a winner with the locals. The Beetroot, Honey & Feta Burger is a vegetarian dish that packs a punch. The beetroot is sous vide till it’s tender, sweet and meaty. It’s paired with a creamy Danish feta for a salty, creamy combo, raw red onion for some pepperiness and crunch. baby spinach for freshness, a drizzle of local honey to bring out the natural sweetness of the beetroot and chipotle sauce for a lift. And it’s all encased in a crusty Three Mills Bakery Ciabatta bun!

And for the meat lovers out there, you can grab this burger with a rasher of bacon added, to satisfy those cravings.
