Inspired by the Lemon Curd Tart
You’ll need
60ml, gin
30ml, white rum
2 tsp, caster sugar
100ml, pineapple juice
1 egg yolk
1 lime
Pineapple wedge
Method
Combine all ingredients into a cocktail shaker and shake until sugar is dissolved, about 10 hard shakes. Fill with ice and shake again until the shaker is very cold. Strain into a chilled glass and garnish with a wedge of pineapple and a twist of lime.
